Easy Irresistible Oreo Banana Bread Recipe Perfectly Moist and Vegan-Friendly

  • 3 medium ripe bananas, mashed
  • 1 ¾ cups (220g) all-purpose flour
  • ¾ cup (150g) granulated sugar (regular or coconut sugar)
  • ⅓ cup (80ml) vegetable oil (canola or sunflower)
  • 1 tablespoon flaxseed meal mixed with 3 tablespoons water (flax egg substitute)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1012 Oreos, crushed into chunks
  • Optional: ¼ cup (60ml) non-dairy milk (almond or oat) if batter is too thick
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Prepare the flax egg by mixing 1 tablespoon flaxseed meal with 3 tablespoons water. Let it sit for 5-10 minutes until thickened.
  3. Mash the bananas in a large bowl until smooth with a few chunks remaining.
  4. Add the flax egg, vegetable oil, granulated sugar, and vanilla extract to the mashed bananas. Stir until combined and smooth.
  5. In a separate bowl, sift together the all-purpose flour, baking soda, and salt.
  6. Gradually fold the dry ingredients into the wet mixture, stirring gently. Add non-dairy milk if the batter is too thick.
  7. Fold in the crushed Oreos, reserving 3-4 chunks for topping. If using nuts, fold them in now.
  8. Pour the batter into the prepared loaf pan and scatter the reserved Oreo chunks on top.
  9. Bake for 50-60 minutes, checking at 50 minutes with a toothpick. It should come out mostly clean with a few moist crumbs.
  10. Cool the bread in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for natural sweetness and moisture. Do not overmix the batter to avoid toughness. Fresh flaxseed meal is important for proper binding. Start checking the bread at 50 minutes to avoid overbaking. Cool completely before slicing to prevent crumbling. For gluten-free, substitute flour with a 1:1 gluten-free blend and add non-dairy milk if needed.
