  • ⅓ cup (80ml) plain yogurt (use dairy-free yogurt to keep it vegan)
  • ½ cup (100g) brown sugar
  • 1 tsp vanilla extract
  • ¼ cup (60ml) vegetable oil (light olive oil or melted coconut oil work well)
  • Optional mix-ins: ½ cup chopped walnuts, chocolate chips, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan lightly with oil or line it with parchment paper for easy removal.
  2. Mash the bananas in a medium bowl with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the yogurt, vegetable oil, brown sugar, and vanilla extract to the mashed bananas. Stir gently until combined—don’t over-mix.
  4. In a large bowl, sift together the all-purpose flour, baking soda, baking powder, cinnamon, and salt.
  5. Pour the banana mixture into the dry ingredients. Using a spatula or wooden spoon, fold gently until just combined. A few small pockets of flour are okay.
  6. If using, fold in optional mix-ins like walnuts, chocolate chips, or dried fruit.
  7. Scrape the batter into your prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 50-60 minutes. Start checking at 50 minutes by inserting a toothpick in the center; it should come out clean or with moist crumbs, not wet batter.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

If the top browns too quickly, tent loosely with foil halfway through baking. Avoid opening the oven door too often to keep temperature steady. Use very ripe bananas for best sweetness and moisture. Do not overmix the batter to avoid a tough loaf. For gluten-free, use a 1:1 gluten-free flour blend. Yogurt can be substituted with unsweetened applesauce or mashed silken tofu, but texture may vary.
