  • 2 tablespoons finely chopped fresh chives or green onions
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional but recommended)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Hard boil the eggs: Place eggs in a single layer in a saucepan, cover with cold water by an inch. Bring to a rolling boil over high heat, cover, remove from heat, and let sit for exactly 10 minutes. Prepare a bowl of ice water.
  2. Shock and peel: Transfer eggs to ice water bath for at least 5 minutes. Tap each egg on the counter, roll to crack the shell, then peel under running cold water.
  3. Chop the eggs: Place peeled eggs in a mixing bowl. Mash with a potato masher or fork to desired consistency (pea-sized pieces with some larger bits).
  4. Prep add-ins: Finely dice celery and chop chives or green onions.
  5. Mix the dressing: In a small bowl, whisk together Greek yogurt, light mayonnaise, Dijon mustard, lemon juice, salt, pepper, and smoked paprika if using. Taste and adjust seasoning.
  6. Combine everything: Pour dressing over mashed eggs. Add diced celery and chopped chives. Fold gently with a rubber spatula until well coated.
  7. Chill and rest: Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  8. Final taste and adjust: After chilling, taste and add more salt or lemon juice if needed. Stir and serve.

Notes
