  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt

  • Juice of 1 lime
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, quartered
  • ¼ cup red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 1 lime
  • Salt to taste
  • 8 small corn or flour tortillas
  • Optional toppings: sour cream, crumbled cotija cheese, extra lime wedges, hot sauce

Instructions

  1. Make the avocado salsa first. In a medium bowl, combine diced avocado, cherry tomatoes, red onion, cilantro, and jalapeño (if using). Squeeze in the lime juice, add a pinch of salt, and gently stir to combine. Set aside.
  2. Prep the shrimp. Pat the shrimp dry with paper towels. In a small bowl, mix chili powder, cumin, salt, and pepper. Sprinkle the seasoning over the shrimp and toss to coat evenly.
  3. Heat the skillet. Place your skillet over medium-high heat and add the olive oil. Let it get hot.
  4. Cook the shrimp. Add the shrimp in a single layer (work in batches if needed). Cook for 2 minutes on the first side, then flip and cook for another 1-2 minutes, until they’re pink and opaque. Add the minced garlic in the last 30 seconds and stir to coat. Squeeze fresh lime juice over the top and remove from heat immediately.
  5. Warm the tortillas. While the shrimp rest, warm your tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 20 seconds.
  6. Assemble the tacos. Lay a warm tortilla flat, add a few shrimp, and top with a generous spoonful of avocado salsa. Add any extra toppings you like.
  7. Serve immediately.

Notes

Don’t overcook the shrimp; they are done when pink and curled into a loose C shape. Let the avocado salsa rest for 5 minutes to meld flavors. Warm tortillas are essential to prevent cracking. Season each layer for best flavor.
