  • 1 cup ricotta cheese (250g), whole milk preferred
  • ½ cup grated Parmesan cheese (50g)
  • 1 large garlic clove, minced
  • 1 large egg, room temperature
  • ½ cup all-purpose flour (60g) or almond flour for gluten-free
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil or melted butter
  • Optional: 2 tablespoons fresh basil or parsley, finely chopped
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Heat a dry skillet over medium heat and sauté the chopped spinach for 2-3 minutes until wilted and most moisture evaporates. Let cool slightly, then squeeze out excess liquid.
  3. In a large bowl, combine ricotta cheese, grated Parmesan, minced garlic, olive oil (or melted butter), and the egg. Stir gently until smooth.
  4. Fold the squeezed spinach and chopped herbs into the ricotta mixture until evenly combined.
  5. In a separate small bowl, whisk together flour, baking powder, salt, and pepper.
  6. Gradually fold the dry ingredients into the ricotta-spinach mixture, stirring just until combined. Batter should be thick but scoopable.
  7. Using a tablespoon or small cookie scoop, drop mounds of batter onto the prepared baking sheet, spacing about 1 inch apart.
  8. Bake for 15-18 minutes until golden on top and cooked through. Bites should feel firm but tender when pressed.
  9. Let the bites rest on the baking sheet for 5 minutes before transferring to a wire rack to cool slightly.
