  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • 4 sprigs fresh thyme (optional but recommended)

Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and black pepper. Let them sit at room temperature for 10-15 minutes.
  2. In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, apple cider vinegar, and minced garlic until smooth.
  3. Heat a large skillet (preferably cast iron or stainless steel) over medium-high heat and add the olive oil. Heat until shimmering.
  4. Sear the pork chops in the hot skillet for 3-4 minutes per side, until a deep golden-brown crust forms. Do not move them while searing.
  5. Reduce the heat to medium-low. Pour the honey mustard glaze into the skillet around the pork chops. Add the butter and fresh thyme sprigs (if using). Stir gently to combine as the butter melts.
  6. Simmer the pork chops in the glaze for 2-3 minutes, turning once or twice to coat evenly. Baste the tops with the pan sauce.
  7. Check for doneness using a meat thermometer; the internal temperature should reach 145°F (63°C).
  8. Transfer the pork chops to a cutting board and let them rest for 5 minutes. The glaze will continue to thicken.
  9. Pour the remaining sticky glaze over the rested pork chops. Garnish with fresh thyme leaves if desired. Serve immediately.

Notes

Do not skip drying the pork chops for a good sear. Watch the heat to prevent the honey from burning. Let the pork rest for 5 minutes before serving. Double the glaze if you love extra sauce. For a dairy-free option, omit the butter or use a dairy-free alternative.
