Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 1/2 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 3/4 cup ketchup
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar, packed
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 1 package (about 8 slices) frozen Texas toast
  • 4 slices provolone cheese (or mozzarella)
  • Optional: 2 tablespoons melted butter for brushing

Instructions

  1. Preheat your broiler. Set your oven rack about 6 inches from the heating element.
  2. Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, for about 3-4 minutes until no longer pink. Add the diced onion and minced garlic. Cook for another 2-3 minutes until the onion is soft and translucent. Drain off any excess fat if needed, leaving about 1 tablespoon in the pan.
  3. In a small bowl, whisk together the ketchup, tomato paste, brown sugar, Worcestershire sauce, yellow mustard, salt, pepper, and smoked paprika if using. Pour this mixture over the cooked beef and stir to combine. Reduce the heat to low and let it simmer for 5-7 minutes, stirring occasionally, until the sauce thickens.
  4. While the filling simmers, arrange the frozen Texas toast slices on a baking sheet in a single layer. Place under the broiler for 1-2 minutes per side, until lightly toasted and golden brown.
  5. Remove the toasted bread from the oven. Spoon a generous amount of the sloppy joe filling onto each slice of Texas toast. Place a slice of provolone cheese on top of each one.
  6. Return the baking sheet to the broiler for another 1-2 minutes, just until the cheese is melted and bubbly.
  7. Serve immediately while the bread is crunchy and the cheese is gooey.

Notes

For best results, use 80/20 ground beef for a juicy filling. Watch the broiler carefully to avoid burning the toast. Use a slotted spoon to drain excess sauce from the filling before piling it onto the toast to prevent sogginess. Let the filling rest for a minute after simmering to thicken slightly.
