Elegant Tea Sandwiches

Delicate and charming tea sandwiches featuring soft bread and creamy herb-infused cream cheese with fresh cucumber or smoked salmon fillings. Perfect for elegant gatherings and quick to prepare.

  • 8 slices white sandwich bread, crusts removed
  • Optional: whole wheat or rye bread for a heartier twist
  • 8 oz (225 g) cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, minced
  • 1 tsp fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • 1 medium cucumber (about 150 g), peeled and thinly sliced
  • 45 radishes, thinly sliced
  • Butter, softened (for spreading on bread)
  • Optional smoked salmon slices (2-3 slices per sandwich)
  • Optional capers (if using smoked salmon)
  • Optional fresh watercress or baby arugula for garnish

Instructions

  1. In a medium bowl, combine softened cream cheese with chopped dill, minced chives, lemon juice, salt, and pepper. Mix until smooth and creamy, about 2 minutes. Set aside.
  2. Peel and thinly slice the cucumber. Lay slices on paper towels, sprinkle lightly with salt, and let sit for 10 minutes to draw out moisture. Pat dry with fresh towels.
  3. Thinly slice radishes.
  4. Remove crusts from bread slices. Optionally, lightly spread softened butter on one side of each slice to prevent sogginess.
  5. Spread a generous layer of cream cheese mixture on the unbuttered side of 4 bread slices.
  6. For cucumber sandwiches, layer cucumber slices evenly over cream cheese. For smoked salmon sandwiches, spread cream cheese, then add smoked salmon slices, capers, and watercress leaves.
  7. Top with remaining bread slices, buttered side down. Gently press to seal.
  8. Using a sharp serrated knife, cut each sandwich into 3 or 4 rectangular or triangular finger sandwiches, trimming edges for neatness. Aim for pieces about 2 inches wide.
  9. Cover sandwiches with plastic wrap and refrigerate for at least 20 minutes before serving to meld flavors and firm bread.

Notes

Spread softened butter on bread before adding wet fillings to prevent sogginess. Salt and dry cucumber slices to keep sandwiches crisp. Chill sandwiches before serving for best flavor and texture. Use a gentle sawing motion when cutting to avoid compressing bread.
