Flavorful Bacon Double Smash Burger

A quick and easy double smash burger recipe featuring crispy edges, smoky thick-cut bacon, melty cheddar cheese, and perfectly toasted buns for a juicy, flavorful burger experience.

  • 1 lb (450 g) ground beef (80/20 blend)
  • 6 slices thick-cut bacon
  • 4 slices cheddar cheese
  • 2 burger buns (preferably brioche or potato buns)
  • 1 tbsp yellow mustard
  • 2 tbsp mayonnaise
  • 4 slices pickles (optional)
  • 1 small onion, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Prepare the bacon: Heat skillet over medium heat. Lay bacon slices flat and cook 4-5 minutes per side until crispy but not burnt. Remove and drain on paper towels. Keep bacon fat in skillet.
  2. Shape the beef balls: Divide ground beef into 4 equal portions (~4 oz each). Roll each into a loose ball without overworking.
  3. Heat the skillet: Increase heat to medium-high until very hot.
  4. First smash: Place two beef balls on skillet. Using a spatula, press each ball down firmly to about 1/4 inch thickness. Cook 2-3 minutes until edges are crispy and brown.
  5. Flip and add cheese: Flip patties carefully. Place a slice of cheddar on each patty to melt while cooking the other side for about 2 minutes.
  6. Repeat for second layer: Repeat smashing and cooking with remaining two beef balls.
  7. Assemble the burger: Toast buns lightly. Spread mayonnaise on bottom bun and mustard on top bun. Layer one cheese-topped patty, two slices of bacon, second cheese-topped patty, pickles and onions as desired. Close with top bun.

Notes

Do not press down on patties after flipping to keep them juicy. Use a very hot pan for crispy edges. Save bacon fat in skillet for extra flavor. Toast buns lightly to prevent sogginess. For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, use vegan cheese and mayo alternatives. Turkey bacon can substitute for leaner option but changes flavor.
