  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers (wooden soaked in water for at least 30 minutes)

Instructions

  1. Cut chicken thighs into 1.5-inch cubes and pat dry with paper towels.
  2. In a medium bowl, combine softened butter, minced garlic, smoked paprika, dried oregano, cayenne pepper (if using), salt, and pepper. Mix well.
  3. Stir in chopped fresh parsley and lemon juice into the butter mixture.
  4. Toss chicken cubes in the butter mixture to coat evenly. Let marinate for 10-15 minutes if time allows.
  5. Thread chicken pieces onto soaked wooden or metal skewers, leaving space between pieces.
  6. Preheat grill to medium-high heat (around 400°F). Lightly oil the grates.
  7. Grill skewers for 10-12 minutes, turning every 3-4 minutes until golden brown with slight char and internal temperature reaches 165°F.
  8. Remove from grill and let rest for 2 minutes. Serve with extra parsley and lemon wedges if desired.

Notes

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. Use softened butter for better spice incorporation. Rotate skewers every few minutes for even cooking and avoid flare-ups by moving skewers to cooler parts of the grill if needed. For dairy-free, substitute vegan butter that melts well. Chicken breasts can be used but watch cooking time to avoid dryness.
