  • 1 pound (450 g) ground beef (80% lean)
  • 1/2 cup (60 g) breadcrumbs (plain or seasoned)
  • 1 large egg (room temperature)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup (120 ml) BBQ sauce (your favorite brand)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, smoked paprika, salt, black pepper, and parsley if using.
  2. Mix thoroughly but gently until just blended; avoid overworking the meat.
  3. Divide the mixture into 8 equal portions and shape each into a 4-inch (10 cm) log. Thread each log onto a skewer, pressing gently to compact.
  4. Preheat grill to medium-high heat (about 375°F / 190°C) and lightly oil the grates.
  5. Grill the skewers for about 10 minutes, turning every 3-4 minutes to char all sides evenly.
  6. Brush the skewers generously with BBQ sauce and continue grilling for another 5-7 minutes, turning and basting every couple of minutes until internal temperature reaches 160°F (71°C).
  7. Remove skewers from grill and let rest for 5 minutes before serving.

Notes

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. Use a meat thermometer to ensure internal temperature reaches 160°F (71°C). Apply BBQ sauce glaze in the last few minutes to avoid burning the sugars. Let skewers rest after grilling to keep them juicy.
