Instructions

  1. Rinse salmon fillets under cold water and pat dry with paper towels. Cut into uniform 1.5-inch chunks and set aside.
  2. In a medium bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, and sesame oil if using. Add black pepper and red pepper flakes if desired. Adjust seasoning to taste.
  3. Toss salmon chunks gently in half of the glaze to coat. Cover and marinate in the refrigerator for 15 to 20 minutes.
  4. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread salmon pieces onto skewers, leaving space between chunks.
  5. Preheat grill to medium-high heat (375°F to 400°F). Clean and oil grill grates to prevent sticking.
  6. Place skewers on the grill and cook for 3 to 4 minutes per side, brushing with remaining glaze during the last minute on each side for a sticky, glossy finish.
  7. Check for doneness: salmon should flake easily with a fork and be opaque but moist inside. Avoid overcooking.
