  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (240ml) buttermilk
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted and slightly cooled, plus more for the griddle
  • 1 teaspoon vanilla extract
  • ¾ cup (130g) semi-sweet chocolate chips

Instructions

  1. Melt 2 tablespoons of unsalted butter and set aside to cool slightly.
  2. In a large bowl, whisk together 1 ½ cups all-purpose flour, 3 tablespoons sugar, 1 ½ teaspoons baking powder, ½ teaspoon baking soda, and ¼ teaspoon salt.
  3. In a medium bowl or large liquid measuring cup, whisk together 1 cup buttermilk, 1 large egg, 1 teaspoon vanilla extract, and the melted butter until smooth.
  4. Make a well in the center of the dry ingredients. Pour the wet mixture into the well and gently stir until just combined. A few lumps are fine; do not overmix.
  5. Gently fold in ¾ cup chocolate chips with a few strokes until evenly distributed.
  6. Let the batter rest for 5-10 minutes while the griddle heats up.
  7. Heat a griddle or large skillet over medium heat (350°F/175°C). Add a pat of butter and let it melt, swirling to coat the surface.
  8. Pour about ¼ cup of batter onto the hot griddle for each pancake, leaving space between them. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  9. Flip the pancake and cook for another 1-2 minutes until the second side is golden brown and the pancake feels springy.
  10. Transfer cooked pancakes to a baking sheet in a 200°F oven to keep warm while cooking the remaining batter. Repeat with remaining batter, adding more butter to the griddle as needed.

Notes

For best results, do not overmix the batter; lumps are okay. Let the batter rest for 5-10 minutes for fluffier pancakes. To keep pancakes warm while cooking the rest, place them in a single layer on a baking sheet in a 200°F oven. For extra chocolate on top, reserve a handful of chocolate chips and sprinkle them onto each pancake right after pouring the batter onto the griddle.
