  • 1 large English cucumber, thinly sliced lengthwise
  • 8 ounces full-fat cream cheese, softened to room temperature
  • 6 ounces thinly sliced deli ham
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh chives
  • 1 teaspoon fresh lemon juice
  • Pinch of garlic powder
  • Salt and pepper to taste
  • Optional: smoked paprika or red pepper flakes for a kick

Instructions

  1. Wash and dry the cucumber. Using a mandoline or vegetable peeler, slice the cucumber lengthwise into thin strips about 1/8-inch (3 mm) thick. Pat dry with paper towels to remove excess moisture.
  2. In a mixing bowl, combine the softened cream cheese, fresh lemon juice, garlic powder, salt, and pepper. Using a hand mixer or whisk, beat until the mixture is smooth and fluffy.
  3. Fold in the finely chopped dill and chives gently to distribute evenly without deflating the cream cheese.
  4. Lay a cucumber strip flat on a clean surface. Spread about a teaspoon of the cream cheese mixture evenly along the length of the strip. Place a thin slice of fresh ham on top. Starting from one end, carefully roll up the cucumber strip with filling inside. Secure with a toothpick if needed. Repeat with remaining strips.
  5. Arrange the rolls on a plate and refrigerate for at least 15 minutes before serving to let flavors meld and rolls firm up slightly.

Notes

Slice cucumbers thin but not too thin to avoid breaking when rolling. Pat cucumber slices dry to prevent sogginess. Whip cream cheese until fluffy for easier spreading. Chill rolls before serving for best texture and flavor. Optional additions include smoked paprika, red pepper flakes, or Dijon mustard for extra flavor.
