These fresh watermelon popsicles are a quick and easy summer treat made with simple ingredients like watermelon, lime juice, and fresh mint. They are hydrating, naturally sweet, and perfect for cooling off on hot days.

Ingredients

  • 4 cups diced seedless watermelon (about 600 grams or 21 ounces)
  • 2 tablespoons fresh lime juice (about 30 ml)
  • 12 tablespoons honey or agave syrup (optional, adjust to taste)
  • 56 fresh mint leaves, finely chopped
  • 1/4 cup water (60 ml)
  • 1 teaspoon lemon juice (about 5 ml)
  • Pinch of salt

Instructions

  1. Cut seedless watermelon into chunks (about 4 cups or 600 grams). Remove any stray seeds.
  2. Place watermelon chunks, lime juice, lemon juice, honey or agave syrup, mint leaves, water, and salt into a blender. Pulse until smooth and slightly frothy, about 30 seconds to 1 minute. Taste and adjust sweetness or acidity if needed.
  3. Optional: Pour the mixture through a fine mesh sieve into a bowl for a super smooth texture, pressing with a spatula.
  4. Pour the watermelon mixture into popsicle molds, leaving space at the top for expansion. Insert sticks and cover molds with lids or foil.
  5. Freeze molds upright for at least 4-6 hours, preferably overnight, until firm but not rock solid.
  6. To unmold, briefly run molds under warm water for 10-15 seconds and slide popsicles out cleanly.

Notes

Adjust sweetness based on the natural sweetness of your watermelon. Adding more water or lime juice can reduce iciness. Use fresh watermelon for best flavor. To unmold easily, run molds under warm water briefly. Popsicles keep well for up to two weeks but taste best within one week.
