Instructions

  1. Pour 9 cups (255 g) of crispy rice cereal into a large mixing bowl and set aside.
  2. In a microwave-safe bowl, combine 1 cup (175 g) white chocolate chips, 1/2 cup (125 g) creamy peanut butter, and 1/4 cup (57 g) melted unsalted butter. Heat in 20-second bursts, stirring between each until smooth and glossy (about 1-2 minutes total).
  3. Stir in 1 teaspoon vanilla extract into the melted mixture.
  4. Pour the melted chocolate mixture over the cereal. Gently fold with a spatula to coat every piece without breaking the cereal (about 3 minutes).
