A quick and easy sweet treat featuring medjool dates stuffed with creamy almond butter, dipped in dark chocolate, and topped with crunchy almonds and shredded coconut. This snack balances indulgence with wholesome ingredients for a guilt-free delight.

  • 20 large medjool dates, pitted
  • ½ cup almond butter (smooth or crunchy)
  • ½ cup dark chocolate chips (70% cocoa or higher)
  • 20 whole almonds
  • ¼ cup unsweetened shredded coconut (optional)
  • Pinch of sea salt

Instructions

  1. Using a sharp knife, make a lengthwise slit down each medjool date and gently remove the pit without tearing the flesh.
  2. In a small bowl, stir the almond butter until smooth. Microwave for 10 seconds if stiff to loosen the texture.
  3. Fill each date with about 1 teaspoon (5 ml) of almond butter using a teaspoon or piping bag, being careful not to overstuff.
  4. Melt the dark chocolate chips in a microwave-safe bowl in 15-second bursts, stirring between, until smooth. Alternatively, melt over a double boiler on low heat.
  5. Dip each stuffed date halfway into the melted chocolate or drizzle chocolate on top. Quickly press one whole almond on top, then sprinkle with shredded coconut and a pinch of sea salt.
  6. Arrange the dates on parchment paper and refrigerate for about 20 minutes until the chocolate sets.

Notes

If dates are too firm, soak in warm water for 10 minutes before prepping. Melt chocolate gently to avoid burning. Lightly toast almonds for enhanced flavor. Dust hands with shredded coconut or chill dates before stuffing to reduce stickiness. Store in an airtight container in the fridge for up to one week or freeze for up to one month.
