  • 1 ½ cups (6.3 oz / 180 g) whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 large eggs, room temperature
  • ½ cup (4 fl oz / 120 ml) plain Greek yogurt
  • ⅓ cup (2.7 fl oz / 80 ml) maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup (2.1 oz / 60 g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line with parchment paper.
  2. In a large bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. In a separate bowl, beat the eggs until smooth. Add the unsweetened applesauce, Greek yogurt, maple syrup, and vanilla extract. Whisk until creamy and blended.
  4. Pour the wet ingredients into the dry ingredients. Gently fold with a spatula or wooden spoon until just combined. If using, fold in the chopped nuts.
  5. Transfer the batter to the prepared pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 40 minutes.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.

Notes

Do not overmix the batter to keep the cake tender. Use room temperature eggs for even baking. Measure flour by spooning into the cup and leveling off to avoid a dense cake. Start checking the cake at 40 minutes to prevent overbaking. Toast nuts lightly for enhanced flavor. For extra moisture, add a tablespoon of olive or melted coconut oil if desired.
