  • ⅓ cup (80 ml) vegetable oil or melted coconut oil
  • ½ cup (120 ml) non-dairy milk (almond, oat, or soy)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mash bananas in a large bowl until mostly smooth with a few lumps.
  3. Add sourdough starter, brown sugar, maple syrup, oil, non-dairy milk, and vanilla extract to the bananas. Mix until smooth and combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gently fold dry ingredients into wet ingredients until just combined; do not overmix.
  6. Fold in optional nuts or vegan chocolate chips if using.
  7. Pour batter into prepared loaf pan, filling about ¾ full, and smooth the top.
  8. Bake for 50-60 minutes, checking doneness with a toothpick starting at 50 minutes. Toothpick should come out mostly clean with a few moist crumbs.
  9. Cool bread in pan on a wire rack for 15 minutes, then remove from pan and cool completely before slicing.
