  • 2 oz light or white rum (e.g., Bacardi)
  • 1 oz fresh lime juice (freshly squeezed)
  • 1 oz coconut cream (canned)
  • 0.5 oz simple syrup (homemade or store-bought)
  • Egg white from 1 large egg (room temperature)
  • Splash of club soda or sparkling water (about 1 oz)
  • 2 dashes Angostura bitters (optional)
  • Ice cubes as needed
  • Garnishes: fresh mint sprigs, lime wheel, or edible flowers

Instructions

  1. Chill a coupe or martini glass in the fridge or freezer for about 10 minutes.
  2. Freshly squeeze about 1 oz of lime juice and strain out seeds.
  3. Add 2 oz light rum, 1 oz coconut cream, 0.5 oz simple syrup, fresh lime juice, and egg white into a cocktail shaker with a few ice cubes.
  4. Dry shake vigorously for about 15 seconds without ice to build frothy foam.
  5. Add ice to the shaker and shake again for 15-20 seconds until well chilled and frothy.
  6. Double strain the cocktail into the chilled glass using a fine mesh strainer.
  7. Top gently with about 1 oz of club soda or sparkling water to add light fizz and lift the foam.
  8. If using, add 2 dashes of Angostura bitters on the foam for a marbled effect.
  9. Garnish with a sprig of mint, lime wheel, or edible flower and serve immediately.

Notes

Use fresh or pasteurized egg whites at room temperature for best foam. Dry shake before wet shaking is essential for frothy texture. Prepare cocktail right before serving to keep foam fresh. Can substitute aquafaba for a vegan version. Adjust sweetness by varying simple syrup. Chill glassware for better presentation.
