Instructions

  1. In a large bowl, cream together 1 cup softened unsalted butter and 3/4 cup granulated sugar using a mixer on medium speed for 2-3 minutes until light and fluffy.
  2. Beat in 1 large egg and 1 teaspoon pure vanilla extract until fully combined and smooth.
  3. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low until just combined. Avoid overmixing.
  5. Divide the dough evenly into 3-4 small bowls depending on desired colors. Add a small dab of gel food coloring to each and gently fold with a rubber spatula to create vibrant swirls without overmixing.
  6. Scoop small spoonfuls of each colored dough onto a clean surface or parchment paper, gently press together, and roll into logs or desired shapes such as spirals for unicorn horns.
  7. Wrap the shaped dough logs in plastic wrap and refrigerate for at least 30 minutes to firm up the dough and keep colors vibrant.
  8. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper or silicone mats.
  9. Slice the chilled dough logs into 1/4-inch (6 mm) thick rounds and place on baking sheets about 2 inches apart.
  10. Sprinkle edible glitter or colorful sprinkles on top.
  11. Bake for 10-12 minutes or until edges start to turn golden and centers look set but soft.
  12. Let cookies cool on the baking sheet for 5 minutes before transferring to cooling racks to cool completely.

Notes

Use gel food coloring to prevent dough from becoming too wet and spreading. Chill dough before baking to keep colors distinct and prevent spreading. Avoid overmixing dough to maintain tenderness. Silicone mats help prevent sticking and promote even baking. If dough is too soft while shaping, refrigerate for 10-15 minutes.
