  • 1 cup (100 g) shredded cheese (cheddar or Monterey Jack)
  • 4 pieces 6-inch flour tortillas
  • Optional toppings: fresh diced tomatoes or pico de gallo, sliced avocado or guacamole, sour cream or Greek yogurt, chopped cilantro, jalapeño slices

Instructions

  1. Heat 1 tablespoon olive oil over medium heat in a large skillet for 1-2 minutes.
  2. Add chopped onion and sauté for 3-4 minutes until soft and translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Add ground beef to the skillet. Brown evenly, stirring and breaking it up with a spatula, about 7-8 minutes until fully cooked with slight browning.
  4. Season the beef with chili powder, cumin, salt, and black pepper. Stir well and adjust seasoning if needed.
  5. Warm tortillas in a dry pan or microwave for 20 seconds until pliable.
  6. Spoon an even amount of beef mixture onto the center of each tortilla. Sprinkle shredded cheese on top while beef is hot to melt the cheese.
  7. Add any optional toppings like diced tomatoes, avocado, or sour cream.
  8. Fold the sides over the filling and roll tightly from the bottom up to form a snug burrito.
  9. Optional: For extra melty cheese, place wrapped burrito back in a warm pan for 1-2 minutes per side or bake in a 350°F (175°C) oven for 5 minutes.

Do not overcrowd the pan to ensure proper browning of beef. Warm tortillas before assembling to prevent cracking. Adding a splash of water or beef broth during cooking keeps beef juicy.
