  • 6 slices ham roll-ups, sliced into bite-sized pieces
  • 1 cup shredded sharp cheddar cheese
  • ½ cup diced cucumber
  • ½ cup cherry tomatoes, halved (optional)
  • ¼ cup finely chopped red onion
  • ½ cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225g) of rotini pasta. Cook according to package instructions, usually 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
  2. Drain the pasta in a colander and rinse briefly under cold water to stop cooking and cool it down. Set aside to drain thoroughly.
  3. In a medium bowl, whisk together ½ cup mayonnaise, 2 tablespoons sour cream, 1 tablespoon Dijon mustard, 1 tablespoon apple cider vinegar, and 1 teaspoon honey. Season with salt and freshly ground black pepper to taste. Whisk until smooth and creamy.
  4. While the pasta cooks, slice 6 ham roll-ups into bite-sized pieces. Dice ½ cup cucumber, halve ½ cup cherry tomatoes, and finely chop ¼ cup red onion.
  5. In a large mixing bowl, add the cooled pasta, ham pieces, shredded cheddar cheese, cucumbers, tomatoes, and red onion. Pour the creamy dressing over the top. Using a large spoon or spatula, gently fold everything together until the pasta is evenly coated and ingredients are mixed well.
  6. Cover the bowl and chill the pasta salad in the refrigerator for at least 30 minutes to allow flavors to meld.
  7. Before serving, taste and adjust seasoning with a pinch more salt or pepper if needed.

Notes

Rinsing pasta under cold water stops cooking and prevents clumping. For less onion bite, soak chopped onion in cold water for 10 minutes before draining. Chilling the salad for at least 30 minutes improves flavor. Swap half mayo for Greek yogurt for a lighter dressing. Use vegan mayo and cheese substitutes for dairy-free version. Gluten-free pasta can be used to make it gluten-free.
