Instructions

  1. Prep your ingredients: finely chop the onion, mince the garlic, grate the ginger, and thinly slice the green onions. Separate and wash the lettuce leaves, then pat them dry. Chop water chestnuts if using.
  2. Mix the sauce: whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, sriracha (if using), and honey in a small bowl. Taste and adjust sweetness or spice as desired.
  3. Cook the chicken: heat vegetable oil over medium-high heat in a large skillet. Add chopped onion and cook until translucent, about 2-3 minutes. Add garlic and ginger, stirring until fragrant, about 30 seconds.
  4. Add ground chicken, breaking it apart with a spatula. Cook until no longer pink, about 6-7 minutes. Season lightly with salt and pepper.
