  • 1 1/2 cups (270g) rainbow chocolate chips (or classic chocolate chips)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat 1 cup softened unsalted butter with 3/4 cup granulated sugar and 3/4 cup packed light brown sugar using an electric mixer on medium speed for 3-4 minutes until fluffy and pale.
  3. Beat in 2 large eggs, one at a time, then stir in 2 teaspoons pure vanilla extract until smooth and glossy.
  4. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the flour mixture into the butter-sugar mixture on low speed, mixing just until combined.
  6. Fold in 1 1/2 cups of rainbow chocolate chips gently with a spatula.
  7. Scoop dough using a cookie scoop or tablespoon onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden but centers are still soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
