A light and floral non-alcoholic drink perfect for spring, combining cherry blossom syrup, fresh lemon juice, sparkling water, and mint for a refreshing and elegant mocktail.

Ingredients

  • 2 tablespoons (30 ml) cherry blossom syrup
  • 1 ounce (30 ml) fresh lemon juice
  • 6 ounces (180 ml) sparkling water
  • 1 teaspoon (5 ml) honey or agave nectar (optional)
  • 68 fresh mint leaves
  • Ice cubes
  • Edible cherry blossoms (optional, for garnish)

Instructions

  1. Squeeze 1 ounce (30 ml) of fresh lemon juice into a measuring cup. Gently rinse and pat dry 6-8 fresh mint leaves. Have your cherry blossom syrup ready (about 2 tablespoons or 30 ml). Fill your serving glass with ice cubes.
  2. In your shaker or jar, combine the cherry blossom syrup, fresh lemon juice, and honey or agave nectar if using (about 1 teaspoon or 5 ml). Shake or stir gently until the honey dissolves completely.
  3. Tear half of the mint leaves and toss them into the mixture. Gently muddle with a muddler or the back of a spoon to release the mint oils without shredding the leaves too much.
  4. Pour about 6 ounces (180 ml) of chilled sparkling water into the shaker or jar. Stir gently to blend but keep the bubbles alive.
  5. Strain the mocktail into your ice-filled glass, leaving the muddled mint behind for a cleaner sip. Garnish with the remaining fresh mint leaves and edible cherry blossoms if available.
  6. Give the drink a quick stir before serving and enjoy immediately for best fizz and flavor.

Notes

Use fresh lemon juice and fresh mint for best flavor. Avoid over-muddling mint to prevent bitterness. Chill sparkling water and glasses ahead of time to keep the drink crisp. Adjust sweetness by varying syrup or honey amounts. Stir gently after adding sparkling water to preserve fizz. Cherry blossom syrup quality greatly affects the final taste; consider making your own or buying a reputable brand like Toraya.
