Refreshing Magical Galaxy Lemonade

A visually stunning and delicious lemonade featuring layered colors inspired by a galaxy, made with fresh lemon juice, butterfly pea flower tea, and sparkling water. Perfect for summer gatherings and easy to prepare.

Ingredients

  • 4 to 5 medium fresh lemons, juiced (about 1 cup or 240 ml fresh lemon juice)
  • 3/4 cup (150 g) granulated sugar (adjust to taste; can substitute with honey or agave syrup)
  • 4 cups (950 ml) cold water for lemonade base
  • 1 tablespoon dried butterfly pea flowers or 2 tea bags
  • 1 to 2 cups (240480 ml) sparkling water (optional but recommended)
  • Ice cubes, plenty
  • Edible glitter or star-shaped sprinkles (optional)
  • Optional: fresh blueberries or blackberries for muddling
  • Optional: elderflower syrup for sweeter floral note

Instructions

  1. Boil 1 cup (240 ml) of water and steep the dried butterfly pea flowers or tea bags for 5 to 7 minutes until the water turns a rich blue color. Remove flowers or tea bags and let the tea cool completely (about 20 minutes).
  2. In a small saucepan, combine 3/4 cup (150 g) sugar with 1 cup (240 ml) water. Heat gently, stirring until sugar dissolves completely. Remove from heat and let cool.
  3. Juice 4 to 5 medium lemons until you have about 1 cup (240 ml) fresh lemon juice. Strain to remove seeds and pulp.
  4. In a large pitcher, combine lemon juice, cooled simple syrup, and 3 cups (710 ml) cold water. Stir gently to blend.
  5. Fill tall glasses with ice cubes to the top. Pour about 2/3 cup (160 ml) of lemonade base into each glass carefully.
  6. Very slowly pour the cooled butterfly pea flower tea over the back of a spoon into the glass so it floats on top of the lemonade layer, creating the galaxy effect.
  7. Top each glass with a splash of sparkling water and a few edible glitter sprinkles or star-shaped decorations if desired.
  8. Serve immediately and encourage stirring before drinking to blend flavors and enjoy the magical color change.

Notes

Chill all liquids thoroughly before layering to maintain separation. Pour butterfly pea flower tea slowly over the back of a spoon to create the galaxy effect. Avoid oversteeping the tea to prevent bitterness. Adjust sugar to taste. Fresh lemon juice is recommended for best flavor and brightness. Store lemonade base and tea separately in the fridge for up to 2-3 days. Serve cold and fresh for best visual and taste experience.
