  • 2 large eggs, room temperature
  • 2 tablespoons fresh lime zest (from about 2 limes)
  • ¼ cup fresh mint leaves, finely chopped
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lime juice
  • Optional: coarse sugar for sprinkling on top before baking

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the lime zest, chopped mint leaves, vanilla extract, and lime juice until evenly combined.
  6. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding by hand until just combined. Avoid overmixing.
  7. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  8. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the prepared baking sheets. Sprinkle with coarse sugar if desired.
  9. Bake for 10-12 minutes, until edges are lightly golden but centers remain soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
