A quick and easy roasted pepper feta dip that combines creamy, tangy feta with sweet, smoky roasted peppers for a perfect party snack.

Ingredients

  • Roasted red peppers (jarred or freshly roasted, about 1 cup)
  • Feta cheese, crumbled (8 ounces / 225 grams)
  • Greek yogurt (1/2 cup / 120 ml)
  • Garlic (1 clove, minced, optional)
  • Extra virgin olive oil (2 tablespoons / 30 ml)
  • Lemon juice (1 tablespoon / 15 ml)
  • Fresh herbs like parsley or dill (1 tablespoon, chopped)
  • Black pepper (to taste)
  • Smoked paprika (1/2 teaspoon, optional)
  • Sea salt (to taste)

Instructions

  1. Roast the peppers (if using fresh): Preheat your oven’s broiler. Place whole red bell peppers on a foil-lined baking sheet and broil, turning occasionally, until the skin is blackened and blistered all over (about 10-15 minutes). Remove them and place in a bowl covered with plastic wrap to steam for 10 minutes.
  2. Peel and seed the peppers: Once cooled, peel off the charred skin. Cut the peppers open and remove seeds and membranes. Pat dry with paper towels to avoid watery dip.
  3. Prepare the dip base: In a food processor, combine the crumbled feta, Greek yogurt, minced garlic, olive oil, and lemon juice. Pulse until creamy but still a bit textured (about 30 seconds to 1 minute).
  4. Add roasted peppers and seasonings: Add the prepared peppers, smoked paprika, black pepper, and a pinch of sea salt. Pulse a few more times until well combined but not completely smooth.
  5. Finish with fresh herbs: Transfer the dip to a serving bowl and gently fold in chopped parsley or dill. Taste and adjust seasoning if needed.

Notes

Use high-quality jarred fire-roasted peppers if short on time. Pat peppers dry to avoid watery dip. Pulse mixture to keep some texture. Adjust salt carefully due to feta’s saltiness. The dip tastes better after chilling for a few hours or overnight. Bring to room temperature before serving. Can be made vegan by substituting feta and Greek yogurt with vegan alternatives.
