  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 tablespoon lemon juice
  • Pinch of red pepper flakes (optional)
  • 6 ounces Havarti cheese, sliced or shredded
  • Lemon wedges (optional, for serving)
  • Extra fresh herbs (parsley or thyme, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix softened butter with minced garlic, chopped parsley, thyme leaves, lemon juice, and red pepper flakes if using. Blend until well combined and set aside.
  3. Pat the shrimp dry with paper towels, then toss with olive oil, salt, and pepper.
  4. Heat a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until just pink and opaque. Remove from heat.
  5. Add the shrimp back to the pan or transfer to a baking dish. Spoon dollops of the garlic herb butter over the shrimp evenly.
  6. Layer the sliced or shredded Havarti cheese evenly over the shrimp and butter mixture.
  7. Bake in the preheated oven for 10-12 minutes, until the cheese is melted and slightly bubbly and the shrimp are hot throughout.
  8. Remove from oven, sprinkle with extra fresh herbs, and serve with lemon wedges on the side.

Notes

Pat shrimp dry before cooking to get a good sear and avoid steaming. Watch shrimp carefully to avoid overcooking, which makes them rubbery. If cheese browns too quickly, tent with foil. Use cast iron skillet for a crispy edge. For dairy-free, substitute butter and cheese with plant-based alternatives. Add panko breadcrumbs for crunch if desired.
