  • 2 pounds (900g) baby potatoes or Yukon gold potatoes, halved or quartered
  • 2 medium yellow onions, thinly sliced
  • 4 tablespoons (60g) unsalted butter, cut into small pieces
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh thyme or rosemary (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup (60ml) vegetable or chicken broth (optional)

Instructions

  1. Wash and dry 2 pounds (900g) of baby or Yukon gold potatoes. Halve or quarter them so they cook evenly.
  2. Peel and thinly slice 2 medium yellow onions.
  3. In a large mixing bowl, combine potatoes, onions, butter pieces, minced garlic, olive oil, fresh herbs if using, and a generous pinch of salt and pepper. Toss gently to coat evenly.
  4. Pour the mixture into the slow cooker insert. Add 1/4 cup (60ml) vegetable or chicken broth if desired.
  5. Cover and cook on low for 4 to 5 hours. Avoid lifting the lid early to retain moisture.
  6. Around the 3-hour mark, gently stir the potatoes with a spoon or spatula to distribute the sauce and prevent sticking.
  7. After 4 hours, test doneness by poking a potato piece with a fork; it should be tender but hold shape. Cook up to 5 hours if needed.
  8. Before serving, taste and adjust salt and pepper. Optionally, add an extra pat of butter on top and let it melt.

Notes

Keep the slow cooker lid closed except when stirring to retain moisture. Use baby or Yukon gold potatoes for best texture. For dairy-free, substitute butter with vegan butter or olive oil. Adding broth is optional but helps prevent dryness. Stir gently mid-cook to avoid breaking potatoes.
