  • 1 teaspoon baking powder
  • ยฝ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ยฝ cup (120ml) sour cream
  • Buttercream frosting:
  • ยฝ cup (113g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30ml) milk or cream

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mix in the sour cream until fully combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  7. Roll the dough out on a lightly floured surface to about ยผ inch (6mm) thickness. Chill for 10-15 minutes if sticky.
  8. Cut shapes using a bunny-shaped cookie cutter and place them about 1 inch apart on the prepared baking sheets.
  9. Bake for 10-12 minutes until edges are set but centers remain soft. Do not brown.
  10. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Make the buttercream frosting by beating softened butter until creamy, gradually adding powdered sugar, vanilla extract, and milk or cream until smooth and spreadable.
  12. Spread a thin layer of buttercream on each cooled cookie using an offset spatula or knife. Optionally, decorate with pastel sprinkles or edible glitter.

Notes

Do not overbake the cookies; remove when edges are set but centers are still soft. Use softened butter for frosting but not melted. Chill dough if sticky for easier rolling. Frost cookies only when completely cooled to prevent melting. Dough can be made a day ahead and chilled overnight for better flavor and easier handling. Adjust frosting consistency with milk or powdered sugar as needed.
