These spicy buffalo shrimp lettuce wraps are a quick, low-carb dinner that comes together in just 20 minutes. Juicy shrimp are seared and tossed in a buttery buffalo sauce, then served in crisp lettuce cups with cool ranch or blue cheese dressing for a flavor-packed, guilt-free meal.

  • 1 lb (450g) large raw shrimp, peeled and deveined (tails removed)
  • 1 tablespoon olive oil or avocado oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup (80ml) Frank’s RedHot Original hot sauce
  • 3 tablespoons unsalted butter
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika (optional)
  • 1 large head of butter lettuce or iceberg lettuce
  • 1/2 cup (120ml) ranch dressing or blue cheese dressing
  • 1/4 cup crumbled blue cheese or feta (optional)
  • 1/4 cup finely diced celery
  • 2 tablespoons chopped fresh chives or green onions

Instructions

  1. Prep the Shrimp (5 minutes): Pat the shrimp completely dry with paper towels. In a medium bowl, toss the shrimp with the olive oil, garlic powder, salt, and pepper. Set aside.
  2. Make the Buffalo Sauce (5 minutes): In a small saucepan over low heat, combine the hot sauce, butter, Worcestershire sauce, and smoked paprika. Stir occasionally until the butter is fully melted and the sauce is smooth. Do not let it boil. Remove from heat and set aside.
  3. Sear the Shrimp (4-5 minutes): Heat a large skillet over medium-high heat. Once hot, add the shrimp in a single layer. Cook for 2 minutes per side, until pink, opaque, and golden-brown. Remove to a plate.
  4. Toss in Sauce (1 minute): Pour the warm buffalo sauce over the seared shrimp and toss gently to coat every piece.
  5. Prep the Lettuce Wraps (3 minutes): Carefully separate 8-10 large lettuce leaves from the head. Rinse and pat dry. If using iceberg, trim the thick white base of each leaf. Arrange leaves on a serving platter.
  6. Assemble (2 minutes): Spoon 3-4 buffalo shrimp into each lettuce cup. Drizzle with ranch or blue cheese dressing. Sprinkle with crumbled blue cheese, diced celery, and fresh chives or green onions. Serve immediately.

Notes

Pat shrimp completely dry for a good sear. Serve immediately to prevent soggy lettuce. For meal prep, cook shrimp and sauce separately, then assemble with fresh lettuce when ready to eat. Leftover shrimp can be stored in an airtight container in the refrigerator for up to 2 days.
