A quick and flavorful breakfast sandwich featuring smoky chipotle scrambled eggs with melted cheddar cheese on a toasted bun, perfect for a spicy morning boost.

  • 4 large eggs
  • 12 chipotle peppers in adobo sauce, finely chopped or blended
  • 2 tablespoons milk or cream
  • ½ cup (50g) sharp cheddar cheese, shredded
  • 1 tablespoon unsalted butter
  • Salt and black pepper to taste
  • Mayonnaise or avocado spread (optional)
  • 2 buns or bread of choice (preferably soft brioche buns)
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Finely chop 1–2 chipotle peppers in adobo sauce (about 1–2 tablespoons). Shred ½ cup (50g) of sharp cheddar cheese. Split and toast your buns lightly. Crack 4 large eggs into a bowl.
  2. Add the chopped chipotle peppers and 2 tablespoons (30 ml) of milk or cream to the eggs. Season with a pinch of salt and pepper. Whisk vigorously until the mixture is uniform and slightly frothy.
  3. Place a non-stick skillet over medium-low heat. Add 1 tablespoon (14g) of butter and let it melt completely, coating the pan.
  4. Pour in the egg mixture. Let it sit undisturbed for about 20 seconds until the edges start to set. Then, gently stir with a spatula, pushing cooked eggs from edges toward the center. Keep the heat low and cook slowly to avoid rubbery eggs.
  5. When eggs are mostly set but still slightly creamy (about 3 minutes), sprinkle the shredded cheese over the top. Cover the pan with a lid for 1 minute to melt the cheese perfectly.
  6. Spread mayonnaise or avocado on the toasted buns if desired. Spoon the cheesy, spicy scrambled eggs onto the bottom bun. Garnish with fresh cilantro or green onions if you like. Top with the other half of the bun.
  7. Serve immediately while warm for the best texture and flavor.

Notes

Cook eggs on medium-low heat to keep them creamy and avoid rubberiness. Finely chop or blend chipotle peppers for even heat distribution. Add cheese near the end and cover briefly to melt perfectly. Toast buns lightly with butter for added flavor. For extra crunch, add crispy bacon or sautéed onions. If chipotle heat is too strong, add sour cream to cool it down.
