  • 3 tablespoons (45g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt
  • 1/2 cup (60g) powdered sugar (for optional glaze)
  • 23 tablespoons (30-45ml) milk or cream (to thin glaze if using)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a floured surface, roll or stretch your 10-ounce (280g) pizza dough into a roughly 10-inch (25 cm) circle or rectangle, about 1/4-inch (6 mm) thick.
  3. In a small bowl, combine 1/4 cup (50g) granulated sugar, 1/4 cup (50g) brown sugar, 2 tablespoons ground cinnamon, and a pinch of salt. Add vanilla extract or nutmeg if using.
  4. Using a pastry brush or spoon, spread the 3 tablespoons (45g) melted butter evenly over the surface of the dough.
  5. Generously scatter the cinnamon sugar mixture over the buttered dough.
  6. Starting from one edge, gently roll the dough into a log shape (like a jelly roll). Then coil the log into a spiral on a parchment-lined baking sheet, tucking the end underneath.
  7. Bake the spiral in the preheated oven for 15-18 minutes until golden brown and caramelized on top.
  8. Remove from the oven and transfer to a wire rack to cool for 5 minutes.
  9. Optional: Whisk 1/2 cup (60g) powdered sugar with 2-3 tablespoons (30-45 ml) milk or cream until smooth and drizzle over the warm pizza.
  10. Slice into wedges and serve warm.

Notes

If sugar caramelizes too quickly, tent the pizza loosely with foil halfway through baking. Use fresh cinnamon for best flavor. The glaze is optional and should be drizzled after cooling slightly to prevent melting off. For gluten-free, use gluten-free pizza dough and adjust baking time. Vegan option: swap butter for coconut oil or vegan margarine and use plant-based dough.
