Tangy Xoconostle Margarita – Easy Homemade Summer Recipe

This tangy xoconostle cactus fruit margarita is a refreshing, complex cocktail with a bright sour kick. Made with simple ingredients, it’s perfect for summer parties and taco nights.

  • 2 medium xoconostle (cactus fruit)
  • 2 ounces silver tequila (blanco)
  • 1 ounce orange liqueur (Cointreau or Triple Sec)
  • 1 ounce fresh lime juice
  • ½ ounce agave syrup (or simple syrup)
  • Kosher salt (for the rim)
  • Ice
  • Optional garnish: slice of xoconostle or lime wheel, fresh mint sprig

Instructions

  1. Rinse the xoconostle under cool water. Cut off the ends, then slice in half lengthwise. Scoop out the flesh with a spoon (about 2 tablespoons per drink).
  2. Drop the xoconostle flesh into a cocktail shaker. Add ½ ounce agave syrup. Muddle gently until the fruit breaks down into a chunky paste.
  3. Add 2 ounces silver tequila, 1 ounce orange liqueur, and 1 ounce fresh lime juice to the shaker. Add a handful of ice.
  4. Secure the lid and shake vigorously for about 15 seconds until the shaker feels frosty cold.
  5. Run a lime wedge around the rim of a rocks glass. Dip the rim into a plate of kosher salt (or salt-chili mix). Fill the glass with fresh ice.
  6. Double-strain the margarita into the prepared glass to catch seeds and pulp (or use the shaker’s built-in strainer for more texture).
  7. Garnish with a slice of xoconostle or a lime wheel. Serve immediately.

Notes

If the drink tastes too tart, add another ¼ ounce of agave syrup and shake again. Don’t over-muddle the xoconostle to avoid bitterness. For a party, pre-muddle the fruit and mix with liquids in a pitcher; store in the fridge for up to 4 hours. Leftover xoconostle flesh can be refrigerated for 3 days or frozen in ice cube trays.
