  • 1 teaspoon dried thyme or 2 sprigs fresh thyme
  • 1 medium onion, sliced
  • 2 medium carrots, cut into chunks
  • 2 celery stalks, chopped
  • 2 cups beef broth (preferably low sodium)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon unsalted butter
  • 1 teaspoon Worcestershire sauce (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325ยฐF (160ยฐC).
  2. Pat the beef roast dry with paper towels.
  3. Season the roast generously with salt, pepper, smoked paprika, garlic powder, and thyme.
  4. Heat olive oil in your roasting pan or Dutch oven over medium-high heat.
  5. Sear the roast on all sides until deeply browned, about 3-4 minutes per side.
  6. Remove the roast and set aside.
  7. Add onions, carrots, and celery to the pan and sautรฉ lightly for 3-5 minutes until fragrant and slightly softened.
  8. Place the roast on top of the vegetables.
  9. Add about 1 cup of beef broth to the pan.
  10. Cover the pan with a lid or foil and roast for about 2.5 to 3 hours, checking internal temperature with a meat thermometer (135ยฐF for medium-rare, 145ยฐF for medium).
  11. Transfer the roast to a cutting board and tent loosely with foil to rest for 15-20 minutes.
  12. Pour the pan juices through a fine mesh strainer into a saucepan.
  13. Melt butter over medium heat, whisk in flour, and cook for 1-2 minutes until golden and bubbling.
  14. Slowly whisk in the strained pan juices and remaining beef broth.
  15. Simmer gently for 5-7 minutes until thickened.
  16. Add Worcestershire sauce, salt, and pepper to taste.
  17. Slice the roast against the grain and serve with the savory homemade gravy poured over the top.

Notes

Do not skip searing the roast to build flavor and crust. Rest the meat after cooking to retain juices. Adjust gravy thickness by adding broth if too thick or simmering longer if too thin. For gluten-free gravy, substitute flour with cornstarch or arrowroot powder mixed with cold water.
