  • ½ cup honey
  • 4 cloves garlic, minced
  • ¼ cup soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • Pinch of freshly cracked black pepper
  • 1 tablespoon olive oil or vegetable oil

Instructions

  1. Preheat oven to 275°F (135°C). Remove the silver skin membrane from the back of the ribs and pat dry with paper towels.
  2. In a medium bowl, whisk together honey, minced garlic, soy sauce, brown sugar, apple cider vinegar, smoked paprika, onion powder, black pepper, and olive oil until thick but pourable.
  3. Place ribs meat side up on a foil-lined baking sheet. Generously coat both sides with the honey garlic sauce, reserving about ¼ cup for basting.
  4. Wrap ribs tightly in foil and bake for 2.5 to 3 hours to break down collagen and tenderize the meat.
  5. Remove ribs from oven, unwrap foil, discard juices, and brush ribs with reserved sauce. Return ribs uncovered to oven at 350°F (175°C) for 20-30 minutes to caramelize the glaze.
  6. Optional: Broil ribs for 2-3 minutes for a charred edge, watching closely to avoid burning.
  7. Let ribs rest for 5-10 minutes before slicing between the bones and serving.

Notes

Remove the silver skin membrane for tender ribs. Wrap ribs tightly in foil to lock in moisture. Finish under broiler for caramelized glaze. If sauce thickens too much, add a splash of water or apple juice to loosen. Sauce can be prepared ahead and refrigerated to intensify flavors. For gluten-free, substitute soy sauce with tamari or coconut aminos. Optional chili flakes or sriracha can add spice.
