  • 2 cups (240g) all-purpose flour
  • ½ cup (60g) whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons dried culinary lavender buds
  • 6 tablespoons (85g) unsalted butter, melted and slightly cooled
  • 3 tablespoons honey
  • ¾ cup (180ml) milk, whole or 2%, room temperature
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease the loaf pan lightly with butter or line it with parchment paper for easy removal.
  2. In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, salt, and dried lavender buds. Stir to evenly distribute the lavender.
  3. In a separate medium bowl, whisk together melted butter, honey, milk, egg, and vanilla extract until smooth and glossy.
  4. Pour the wet mixture into the dry ingredients. Fold gently with a spatula or wooden spoon until just combined; some lumps are fine.
  5. Spoon the batter into the prepared loaf pan, smoothing the top to even it out.
  6. Bake for 35 to 40 minutes, starting to check at 30 minutes with a toothpick inserted in the center; it should come out clean or with a few moist crumbs.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice with a serrated knife and serve plain or with butter, honey, or soft cheeses.

Notes

Do not overmix the batter to keep the crumb tender. Use culinary-grade dried lavender only. Check bread starting at 30 minutes with a toothpick to avoid overbaking. For a golden crust, brush melted butter on top after baking. Cool completely before slicing to prevent crumbling.
