  • 2 bay leaves

  • ½ teaspoon black pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano (Mexican oregano if available)
  • ½ teaspoon chili powder (ancho chili powder for milder heat)
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional, for extra heat)
  • 12 to 16 small corn or flour tortillas
  • Fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Pickled red onions (homemade or store-bought)
  • Crumbled queso fresco or shredded Monterey Jack cheese
  • Sour cream or Mexican crema
  • Sliced jalapeños (fresh or pickled)
  • Diced avocado

Instructions

  1. Prep the beef: Pat the chuck roast dry with paper towels. Cut the roast into 3 to 4 large chunks (about 3-inch pieces). Season generously on all sides with salt and pepper.
  2. Make the spice blend: In a small bowl, mix together the smoked paprika, cumin, oregano, chili powder, garlic powder, and cayenne if using. Set aside.
  3. Sear the beef: Heat the olive oil in your Dutch oven over medium-high heat until it shimmers. Working in batches so you don’t crowd the pot, sear the beef chunks for 3 to 4 minutes per side, until deeply browned. Transfer the seared beef to a plate.
  4. Cook the aromatics: Reduce the heat to medium. Add the diced onion to the pot and cook for 4 to 5 minutes, scraping up any browned bits from the bottom. Add the minced garlic and cook for another 30 seconds until fragrant.
  5. Bloom the spices: Sprinkle the spice blend over the onions and garlic. Stir constantly for about 30 seconds until the spices smell amazing.
  6. Build the braising liquid: Pour in the beef broth and use your wooden spoon to scrape up any remaining browned bits from the bottom of the pot. Add the fire-roasted tomatoes, minced chipotle peppers, adobo sauce, bay leaves, and apple cider vinegar. Stir to combine.
  7. Return the beef: Place the seared beef chunks back into the pot, nestling them into the liquid. The liquid should come about halfway up the sides of the beef. If it doesn’t, add a splash more broth or water.
  8. Braise: Bring the liquid to a gentle simmer, then cover the pot with the lid and transfer to a preheated 325°F (163°C) oven. Let it cook for 2½ to 3 hours, until the beef is fork-tender and easily shreds.
  9. Shred the beef: Remove the pot from the oven. Use tongs to transfer the beef chunks to a large cutting board. Discard the bay leaves. Let the beef rest for 5 minutes, then use two forks to shred it into bite-sized pieces.
  10. Finish the sauce: While you shred the beef, place the pot back on the stovetop over medium heat. Let the braising liquid simmer and reduce for 8 to 10 minutes until it thickens slightly. Taste and adjust seasoning with more salt if needed.
  11. Combine: Return the shredded beef to the pot and stir to coat it in the sauce. Let it simmer together for another 2 to 3 minutes so the beef soaks up all that flavor.
  12. Warm the tortillas: While the beef finishes, heat a dry skillet or griddle over medium-high heat. Warm each tortilla for about 30 seconds per side until they’re pliable and have a few char marks. Wrap them in a clean kitchen towel to keep warm.
  13. Assemble and serve: Fill each tortilla with a generous amount of shredded beef. Top with your favorite fixings — fresh cilantro, a squeeze of lime, pickled onions, and a dollop of sour cream. Serve immediately.
