  • 12 teaspoons honey, maple syrup, or agave syrup (optional, adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • Optional toppings: fresh berries, chopped nuts or seeds, sliced banana or apple chunks, shredded coconut, cacao nibs

Instructions

  1. Measure and mix the dry ingredients: In a mixing bowl or jar, combine 1/2 cup rolled oats and 2 tablespoons chia seeds. Stir to mix evenly.
  2. Add the wet ingredients: Pour in 1 cup milk of choice, 1/4 cup Greek yogurt if using, 1-2 teaspoons sweetener, 1/2 teaspoon vanilla extract, and 1/4 teaspoon cinnamon.
  3. Whisk or stir vigorously to blend everything thoroughly, preventing chia seed clumps and coating all oats evenly.
  4. Seal the jar or bowl with a lid or plastic wrap and refrigerate for at least 6 hours or overnight to allow chia seeds to absorb moisture and oats to soften.
  5. Check the texture in the morning; if too thick, stir in a splash more milk; if too thin, add a teaspoon more chia seeds and let sit 30 more minutes.
  6. Add desired toppings such as fresh berries, nuts, sliced banana, and a drizzle of honey or maple syrup before serving.

Notes

Whisking chia seeds and liquids thoroughly prevents clumping. Use old-fashioned rolled oats for best texture. Adjust liquid amounts for preferred consistency.
