  • 1/4 cup powdered lemonade mix (unsweetened)

  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 2 tablespoons powdered lemonade mix (for coating)
  • Pinch of salt

Instructions

  1. Line a large baking sheet with parchment paper or wax paper. Measure out 9 cups of Rice Chex cereal into your largest mixing bowl. Zest the lemon.
  2. In a large microwave-safe bowl, combine 12 ounces white chocolate chips and 1/4 cup unsalted butter. Microwave in 30-second intervals, stirring well after each, until completely smooth (about 1 1/2 to 2 minutes).
  3. Stir in 1/4 cup powdered lemonade mix, 1 tablespoon fresh lemon zest, and 1 teaspoon vanilla extract until fully incorporated.
  4. Pour the warm lemon-white chocolate mixture over the cereal. Gently fold with a spatula until every piece is evenly coated.
  5. In a small bowl, whisk together 1 1/2 cups powdered sugar, 2 tablespoons powdered lemonade mix, and a pinch of salt. Transfer to a large resealable plastic bag.
  6. Working in batches (about 3 cups at a time), transfer coated cereal to the bag. Seal and shake vigorously until every piece is coated.
  7. Spread coated cereal onto the prepared baking sheet in a single layer. Let sit at room temperature for 15-20 minutes to set.
  8. Gently break apart any clusters. Transfer to a serving bowl or store in an airtight container.
