  • About 1 cup coarse sanding sugar in assorted colors (purple, blue, pink, or your favorite) (200 g)
  • Edible pearl dust or glitter (optional)
  • Rock candy crystals or crushed hard candy (optional)

Instructions

  1. Prep Your Ingredients (10 minutes): Take the butter and eggs out of the fridge to warm to room temperature. Measure out all dry ingredients separately. Preheat your oven to 350°F (175°C).
  2. Cream Butter and Sugars (5-7 minutes): In your mixing bowl, beat the softened butter with granulated and brown sugar until light and fluffy.
  3. Add Eggs and Vanilla (2 minutes): Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. Mix Dry Ingredients (3 minutes): In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing on low just until combined. Do not overmix.
  5. Shape the Cookies (15 minutes): Scoop tablespoon-sized balls of dough onto your prepared baking sheet, spacing them about 2 inches apart. Using your finger or an offset spatula, gently create a shallow well in the center of each dough ball.
  6. Fill with Sugar Crystals (5 minutes): Spoon coarse sanding sugar and crushed rock candy into each indentation. Be generous but don’t overfill.
  7. Bake (12-15 minutes): Bake in the preheated oven until the cookies are lightly golden on the edges and the sugar centers begin to melt and glisten.
  8. Cool and Add Sparkle (10 minutes): Let the cookies cool completely on the baking sheet to allow the sugar to harden into crystal-like formations. Optionally, brush lightly with edible pearl dust once cooled.

Notes

Use coarse sanding sugar for the best crystal effect; regular granulated sugar melts too quickly. Create shallow wells in the dough to contain sugar crystals and prevent spreading.
