  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water (for slurry)
  • 1 teaspoon sesame oil (optional)
  • 1 pound large shrimp, peeled and deveined
  • 2 medium bell peppers (red and orange), sliced
  • 1 cup broccoli florets
  • 1 large carrot, julienned or thinly sliced
  • 3 green onions, sliced (white and green parts separated)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 tablespoons neutral oil (avocado, grapeseed, or vegetable)

Instructions

  1. Thaw the shrimp (if frozen) by placing in a colander and running cold water over them for 5-7 minutes. Pat dry with paper towels and season lightly with salt and pepper.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, and grated ginger. In another tiny bowl, mix cornstarch with 2 tablespoons cold water to make a slurry.
  3. Prep vegetables: slice bell peppers into thin strips, cut broccoli into small florets, julienne or thinly slice carrot, and slice green onions separating white and green parts.
  4. Heat 1 tablespoon neutral oil in a large skillet or wok over high heat until shimmering.
  5. Add shrimp in a single layer (cook in batches if needed) and cook for 1-2 minutes per side until pink and opaque. Transfer to a plate and set aside.
  6. Add remaining 1 tablespoon oil to the pan. Add white parts of green onions, bell peppers, broccoli, and carrot. Stir fry for 3-4 minutes until bright and slightly crisp.
  7. Pour teriyaki sauce into the pan with vegetables. Stir and let simmer for 1 minute. Stir the cornstarch slurry and pour it in; sauce will thicken immediately.
  8. Return cooked shrimp to the pan. Toss everything together for 1-2 minutes until shrimp are heated through and coated.
  9. Drizzle with sesame oil if using. Sprinkle with green onion tops and sesame seeds. Toss once more, then remove from heat.
  10. Serve immediately over steamed rice, noodles, or cauliflower rice.

Don’t overcrowd the pan; cook shrimp in batches if needed. Pat shrimp dry to ensure proper searing. Prep all ingredients before starting as stir frying moves fast. Taste sauce before adding and adjust sweetness or saltiness. Cornstarch slurry is essential for the glossy texture.
